Covid-19 Recipe series: Chewy Oatmeal Chocolate Chip Cookies

Yield: 5 dozen

Ingredients:

1 cup butter
1 cup granulated sugar
1/2 cup brown sugar
1 egg
1 teaspoon vanilla
1 1/4 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
2 cups rolled oats
1 cup Corn Flakes cereal
3/4 cup chocolate chips

 

Directions:

Cream butter and sugars; add egg and vanilla and stir to combine. Sift flour, baking powder, and baking soda into creamed mixture and stir well to combine. Add rolled oats, Corn Flakes, and chocolate chips and stir well again. Roll into one inch balls and place on baking sheet. Bake at 375ºF for about 12 minutes until lightly browned.
